the 'puffed rice choco truffle' squares

its 11am, breakfast has been and gone, and it's too early for lunch. having these guys pre-prepared (they last 1 week in the fridge) is the ultimate guilt-free chocolate snack for those fridge-foraging moments. excellent snack choice for children and adults alike. 


ingredients // 

• 4 tbsp coconut oil

• 4 tbsp maple syrup

• 6 tbsp cocoa powder

• 8 tbsp nut butter (we use hazelnut, but peanut and cashew also great)

• puffed rice

• pinch of sea salt


method // 

• Melt coconut oil in a saucepan

• when melted, add the maple syrup, cocoa powder, nut butter, puffed rice and salt to the coconut oil and stir until fully melted. don't let it bubble. we're only heating it gently, not cooking. remove from heat

• pour into a shallow dish - the wider it is, the quicker it will cool. then place in the fridge for an hour

• once set, cut into squares (whichever size you deem is a good mouthful). around 8-10 squares is the average

• keep in fridge at all times as they will melt if not - but the chances are they won't last very long once the foraging begins
